Do you ever get afternoon sugar cravings and need a sweet, delicious GUILT free snack to get you through the afternoon? I made these lemon poppy seed protein balls from scratch the other day in less than ten minutes and they were delicious!
All you need is a lemon, vanilla protein powder, water, and oatmeal.
If you currently have vanilla Shakeology, that is also a great ingredient to use in place of the vanilla protein powder. While Shakeology is not a protein powder (it’s much more than that!), it will get you an additional boost of superfoods in your afternoon snack! Lemon Poppy Seed Protein Balls
- 3 scoops vanilla protein powder (or vanilla Shakeology)
- 1/2 cup dry oatmeal
- zest from 1 lemon
- juice from 1 lemon (about 4 tb.)
- 8 tb. water
- 1 tb. poppy seeds
- Optional: natural sweetener (I used about 5 drop of liquid stevia)
Mix all ingredients together in a small mixing bowl. It will appear like it is not sticking together at first. Once you feel all the ingredients are well mixed, you will then use your hands to form small balls.
It will be ready to eat right away. However, make sure to put the remainder that you don’t eat in the fridge overnight. Personally, I thought they tasted even better the next day. They were even a bit more firm. This would be a great recipe to BATCH cook on Sunday so that you can have them all week long. Enjoy!
